We’re diving into the flavours that define the island—from savoury feasts made for family gatherings to sweet treats that mark special occasions. Discover 5 dishes that give Ibiza its soul, one recipe at a time.

Flaó: The Sweet Taste of Ibiza

 

 

Flaó is a traditional Ibizan dessert, dating all the way back to the medieval era. This delicious cheesecake combines fresh sheep or goat ricotta with hints of aniseed and mint, reflecting the island’s Moorish and Catalan culinary influences. It’s traditionally prepared during Easter but still enjoyed year-round.

 

For an authentic slice of Flaó, visit Can Cosmi in Santa Eulalia or Bar Costa in Santa Gertrudis.

 

Flaó Recipe

 

  • 250g ricotta cheese (preferably sheep or goat)
  • 3 eggs
  • 150g sugar
  • Zest of 1 lemon
  • A handful of fresh mint leaves, chopped
  • 1 tsp aniseed
  • 250g flour
  • 125g butter
  • Pinch of salt

 

  1. Preheat the oven to 180°C (350°F).
  2. Mix the flour, butter, and a pinch of salt to create a crumbly dough. Add water gradually until a dough forms, then roll it out and press into a tart pan.
  3. In a bowl, combine ricotta, eggs, sugar, lemon zest, mint, and aniseed until smooth. Pour this mixture over the crust.
  4. Bake for 35-40 minutes, or until the filling is set and the crust is golden.
  5. Allow to cool before serving. Enjoy with a glass of local Hierbas Ibicencas!

Hierbas is a traditional herbal liqueur deeply rooted in Ibiza’s history. Originating from the island’s rural communities, it was initially crafted as a digestive aid using local herbs. Its distinctive flavour comes from a blend of ingredients like fennel, rosemary, thyme, mint, and lemon peel, combined with an anise-flavoured spirit. Recognised as a Protected Geographical Indication (PGI), Hierbas is a proud symbol of Ibiza’s cultural identity, reflecting the island’s natural abundance and artisanal traditions.

 

Most restaurants and bars will serve up Hierbas, however, there are particular spots on the island that make and serve their own family secret recipes. We recommend taking a tour of the distillery at Can Rich in San Antonio, where you can learn about the production process. Otherwise, choose Bar Anita in San Carlos for one of the island’s favourites. Ibiza Outdoors regularly do walking tours where you forage for your own ingredients before making a bottle in a group workshop.

Hierbas Recipe

 

  • 1 litre of aguardiente (anise-flavoured spirit)
  • 3-4 sprigs of fresh rosemary
  • 3-4 sprigs of thyme
  • 5-6 fresh mint leaves
  • 1 small handful of fennel seeds
  • Zest of 1 orange
  • Zest of 1 lemon
  • 1 small cinnamon stick
  • 3-4 juniper berries
  • 200g sugar

 

  1. Combine the herbs, citrus zests, and spices in a large glass jar.
  2. Pour the aguardiente over the ingredients, ensuring everything is fully submerged.
  3. Seal the jar and let it macerate in a cool, dark place for 1-2 months, shaking occasionally to blend the flavours.
  4. After maceration, strain the liquid through a fine sieve or cheesecloth to remove solids.
  5. Dissolve the sugar in a small amount of water to create a syrup, then add it to the strained liquid.
  6. Bottle the Hierbas and let it rest for at least one week before enjoying. Serve neat, over ice, or as part of a cocktail.

 

Sofrit Pagès: A Hearty Taste of Ibizan Tradition

 

 

Sofrit Pagès is a traditional Ibizan stew, which was originally a celebratory dish prepared for family gatherings. This hearty meal combines chicken, lamb, and pork with local sausages like sobrassada and botifarra, stewed alongside potatoes, garlic, and seasonal vegetables. The dish reflects Ibiza’s agricultural heritage, bringing together the flavours of the land in one pot.

 

For an authentic Sofrit Pagès experience, visit Ca n’Alfredo in Ibiza Town, a historic restaurant known for its dedication to traditional Ibizan cuisine. Another excellent spot is Sa Soca in San Josep, where generations-old recipes are brought to life. For a rustic countryside vibe, make sure to go to Cas Pagès in Santa Eulària.

 

Sofrit Pagès Recipe

 

  • 300g chicken (cut into pieces)
  • 300g lamb (cut into pieces)
  • 300g pork (cut into pieces)
  • 100g sobrassada (soft cured sausage)
  • 100g botifarra (blood sausage)
  • 4 medium potatoes, peeled and diced
  • 1 large onion, finely chopped
  • 3-4 garlic cloves, minced
  • 2-3 ripe tomatoes, grated
  • 1 red bell pepper, diced
  • Olive oil
  • A handful of fresh parsley, chopped
  • Salt and pepper
  • 1 tsp paprika
  • 1-2 cups chicken stock

 

  1. Heat olive oil in a large pot and brown the chicken, lamb, and pork pieces. Remove and set aside.
  2. In the same pot, sauté the onions, garlic, and red pepper until softened.
  3. Add the grated tomatoes, cooking until the mixture thickens into a sofrito.
  4. Return the meats to the pot, season with paprika, salt, and pepper, and stir to coat.
  5. Add the diced potatoes, sobrassada, and botifarra, then pour in the chicken stock. The liquid should just cover the ingredients.
  6. Simmer gently for about 45 minutes, stirring occasionally, until the meat is tender and the potatoes are cooked through.
  7. Garnish with fresh parsley before serving. Enjoy this dish with crusty bread and a glass of local wine.

 

Café Caleta: Tradition in a Cup

 

 

Café Caleta is more than just a coffee; it’s a warm, spiced embrace that embodies Ibiza’s seafaring heritage. This aromatic drink was originally concocted by fishermen who brewed it on their boats to keep warm during chilly mornings. It’s become a cherished tradition, often enjoyed during festive occasions or at the end of a beachside meal.

 

The best spots on the the island (in our humble opinion) are of course Sa Caleta, where the drink is said to have originated from, as well as Yemanja – where the drink is mixed and served tableside all year round.

 

Café Caleta Recipe

 

  • 500ml freshly brewed strong coffee
  • 100ml brandy
  • 100ml dark rum
  • Peel of 1 orange
  • Peel of 1 lemon
  • 1 cinnamon stick
  • 3-4 cloves
  • 3-4 tbsp sugar (to taste)

 

  1. In a large saucepan, combine the orange and lemon peels, cinnamon stick, cloves, sugar, brandy, and rum.
    2. Heat gently over low heat to infuse the flavours, stirring until the sugar dissolves
  2. Add the freshly brewed coffee to the mixture and simmer gently for a few minutes. Avoid boiling to retain the alcohol.
  3. Strain the drink into mugs or heatproof glasses, removing the peels and spices.

Serve hot, ideally with a slice of local dessert like Flaó for a perfect Ibizan pairing.

 

Greixonera: Ibizan Nostalgia in Every Bite

 

 

Greixonera is another traditional dessert, with roots in the island’s resourceful culinary traditions. This baked pudding was born out of the need to repurpose leftover ensaïmadas (spiral-shaped pastries), blending them with eggs, sugar, and milk to create a sweet and satisfying dish. Named after the earthenware pot that it’s baked in, Greixonera is a staple at most family gatherings.

 

Head to Ca na Ribas for one of the best, or Cas Pagés – both in Santa Eulalia.

 

Greixonera Recipe

 

  • 6-8 leftover ensaïmadas (you can use brioche or croissants as a substitute)
  • 1-liter whole milk
  • 6 eggs
  • 200g sugar
  • Zest of 1 lemon
  • 1 cinnamon stick
  • 1 tsp vanilla extract
  • Butter (for greasing the baking dish)

 

  1. Preheat the oven to 180°C (350°F) and grease an earthenware or ceramic baking dish with butter.
  2. Tear the ensaïmadas into small pieces and spread them evenly in the dish.
  3. In a saucepan, heat the milk with the cinnamon stick and lemon zest until just simmering. 4. Remove from heat and let it infuse for a few minutes.
  4. In a separate bowl, whisk the eggs, sugar, and vanilla extract. Gradually add the infused milk, discarding the cinnamon stick and zest, while whisking continuously.
  5. Pour the mixture over the ensaïmada pieces, ensuring they are well-soaked. Let it sit for 5-10 minutes to absorb the liquid.
  6. Bake for 40-45 minutes, or until the top is golden and the pudding is set.
  7. Allow to cool before serving, and enjoy this sweet slice of Ibizan heritage with a cup of coffee or a splash of Hierbas Ibicencas.

So where are we now? Ask anyone who lives in Ibiza all year round about the off-season, and they’ll sing the virtues of an island winter for as long as you’re prepared to listen. And for good reason. Winter days on Ibiza are filled with sunshine, and life is still lived outdoors – think lunches on the beach, strolls through the countryside and sunsets with a cocktail in hand. After dark, it’s all about getting cosy and snuggling up by the fire, on the sofa, under plush blankets, by candlelight, with your loved ones and your furry friends. It seems it’s not only the Danish who’ve mastered the art of hygge – Ibicencan homes have been specifically built for it for centuries.

A lot of island living rooms – be it in a restored finca or a luxurious new build villa – are centred around a blazing hearth. In fact, many Ibiza homes feature more than one fireplace throughout the house, from additional chill-out nooks with open fireplaces, wood burning ovens in the kitchen, central wood burners that are piped through walls to heat additional parts of the home, and even striking floating fireplaces in the bedroom or fire pits in outdoor living areas. Nothing beats the crackling sounds of the flames or the mesmerising colours, or even the wintry scent of chimney smoke outdoors – that very first teaser that you’re about to enter the cosy zone.

Fireplaces do require homeowners to be quite hands-on – not so far as to say you’ve got to head out into the forest and chop and carry wood (unless you feel the need to use an axe, you can have firewood delivered directly to your door), however building and tending to a fire requires a certain level of attention to detail. Many people find the act of making a fire quite therapeutic, or even meditative – slowly, slowly building it up until your house is toasty, and then maintaining the right level of heat until bedtime is indeed satisfying. Keeping the fireplace clean and safe is another aspect to stay on top of – employing a chimney sweep before and after the winter months is essential, as is installing smoke alarms and having a fire extinguisher close to hand along with the right tools.

For those who prefer their home to be warmed up without the commitment of tending to a roaring fire on a daily basis, installing a gas or electric fireplaces can suffice. You’ll still get to be transfixed by the beauty of flickering amber flames, without getting your hands dirty. And while the fireplace – be it wood-burning, gas or electric – is a focal point for winter evenings, many modern Ibiza homes also come fitted with underfloor heating, for those who like their home to be cosy 24/7 – otherwise, you’ll need a fluffy pair of slippers permanently parked next to the bed to avoid that first cold moment of contact on the tiled finca floor in the morning.

Once you’ve got the home fires burning (and/or the underfloor heating cruising), creating stylish spaces that encourage feelings of relaxation, comfort and yes, hygge, is the next step. Throw blankets are first and foremost on the list when it comes to winter-ising your home – although the fire itself keeps you warm, it’s that wonderful feeling of being wrapped up safe and secure that a blanket brings that makes it the ultimate cold weather accessory. Chunky knitted wool, velvety-soft chenille, ultra-soft cashmere, cosy shearling, heavy cotton, smooth velour, fluffy fleece or warm waffle weave – there’s a throw rug or blanket that’s j-u-s-t right for everyone. Layer them over the edges of your sofas, armchairs, on the end of your bed or pile them in baskets by the fireplace, ready to pull out at a moment’s notice. Lorena D’Ercole: “My art reaches into the deepest levels of my clients’ souls.”

Art, and the process of creation, can mean completely different things to different people. For Lorena D’Ercole, it is an expression of love and a way to connect to the deepest desires of one’s soul. 

Despite lacking any formal training, the Swiss-born painter’s emotive and deeply personal pieces are gaining much appreciation. Currently, her waiting list for commissions is up to four to seven months long.

In 2020, she developed her own unique method called “InYouArt”, a painting process during which she infuses her clients’ deepest desires and personal history within the artwork in the shape of keywords that are hidden below the painted motif. Villa Contact will be the first in Ibiza to collaborate with Lorena and implement this new method of art in Ibiza. 

Here, the visionary artist talks about the challenging and emotional journey that led her to art, her deeply personal creative process and the changes she would like to see on Ibiza’s art scene, an island intrinsically linked with her personal story…

How did you first begin your career as an artist? 

I started in February 2020. I was going through a lot of stress and my friend Alina who is an artist who I was with in Bali, said just paint, and I did. I was painting out of pure love, and everyone found it incredible what I achieved. I am very blessed that at the moment I have grown through a consistent number of private commissions. Now I have a waitlist of four to seven months – without even promoting on social media! 

 

Was there anything that triggered your journey into art? 

At age 42 I hit a life crisis. During this time, I felt a darkness across all three areas of my life; my business, personal and spiritual life. It felt like my soul was ‘done’. I had never truly had love at this stage; I didn’t love myself so I wasn’t able to find the right loving relationships. I had an amazing job, but working in nightlife meant I wasn’t nourishing my soul. At 42, during this darkness I tried to kill myself… and when I did, I had this incredible vision. 

 

 

The vision was of my first love at 14 years old. He said, ‘You will find your love, with the same name as me. He told me a fable that will help others and you will write a book (Kejora) about this. He also told me you will not have kids but you will create a lot…’. Then, 6 months later, something unbelievable happened. I met my husband Marco on the dancefloor at DC-10 in Ibiza and everything from that vision came true. 

I’m 47 now and this journey has led me to the art that I do now. At the moment I am happy and I have balance in my life. That means I have found the source of happiness in balance, and I found the force to pursue my own realisation. 

 

 

Art means many things to different people. What does it mean to you? 

For me art is love and energy. Really, I am not an artist: I am in the service of art, it’s the way I can really reconnect with my higher self and I am so guided. I work with incredible people, incredible emotions, incredible places, incredible clients – I am so very grateful.

You have developed a very unique style called “InYouArt”, can you tell our readers about this? 

I work with companies and individuals in the same way. They put their DNA, their unique ‘code’, into the art and it is like a story or message they want within the piece. It’s very deep work; it can be their history and what they want for the future for their business or for themselves. Only the person knows what’s inside, it’s completely private. 

So for a company, for example, that is passed down from father to son – the code could contain their story inside, why they set up the company, any inspiration or desires… And only they will know what is inside of this. I then create the painting on top. 

What is beautiful for this person is that their story is kept on the canvas. When I begin with someone it’s like we begin a ceremony. I find out which source, what energy I will share. What is important to protect the soul. The only thing the client tells me about the art is their code and the colours they want to use. 

 

 

Sounds fascinating, and your style of art is very deep! 

Yes, it’s pure consciousness – what is hidden in the layers and what you can see in the subconscious. You put your DNA and the code in the art, reminding us all that we know everything anyway, that we have everything inside and the painting allows us to go deeper. I encourage clients to really do this. In general, we forget to go deeper, to take time to do this. 

 

 

Have you experimented with bringing InYouArt and NFTs together?

Yes, the art pieces become NFTs. From their codes I create an NFT code and then they can choose to share it with anyone they want. What I love is that we can use technology to work with spirituality, to change the world in the right way.

Now, in Ibiza, I am working on a concept with DJs from the island. I want to get 11 in total and create their private codes within art, which they can leave for the next generation. The NFT code only goes to the DJ and the buyer.

 

You are an avid traveller and passionate about Ibiza, how have you seen the art scene change on the island? 

It was my wish to connect with Ibiza. It’s where I met my husband and I have had so many amazing experiences here. It has become very commercial in recent years, and I suppose it would be great to bring the artistic energy back to the island. 

 

 

Ibiza has always been a muse for artists and musicians, why do you think it holds this inspiration? 

So many reasons! The international community, the music, which is an emotion in itself, the energy, of course, and that every age can socialise and be together here. It’s so mystical and magical to see children connect with middle age and elderly people at events, and Ibiza is somewhere that makes it possible through its fiestas and community.

Ibiza is somewhere where the consciousness is high, so we have very high level, open-minded people that think out of the box, and this is what makes it unique. 

 

Art is returning to the forefront of the island. Many artists are coming back and there is a growing scene of local creatives. How do you see the art scene developing here in Ibiza and what would you like to see more of? 

I would love to see Ibiza return to the hippy spirit, so more focussed on liberty and freedom. The hippy style is in its roots and I would like to see more revolution around seeking the truth. There is so much fake news everywhere and Ibiza could lead the way for art and truth.

 

 

You have visited some of the world’s most creative cities and countries. What cities provide the most inspiration for your creativity?  

I have loved getting inspiration from many source. Travelling is a big inspiration for me, all the people I have met along the way. Each person I have met and what I see in their code. There are many places I would love to still visit like Mexico, Brazil, India, Japan and Tokyo. 

 

If you were to leave a legacy as an artist what would it be?

The sunshine, the crystal clear waters, the eighty plus beautiful coves or ‘calas’ to explore, and the surrounding islets, provides ideal day and overnight boating opportunities, not to mention the active social and sporting life and community available in any of Ibiza’s five yacht marinas. 

Things to consider before buying your dream boat in Ibiza

There’s a few things you’ll want to think about before diving in and setting sail on your new purchase. We’ve made it simple for you by outlining the most important things to look out for. 

Choosing the right type of boat for your needs
Have a think about:

Is it a day boat or an overnight boat you require?

I.e Will you be cruising around Ibiza and Formentera or going on further trips to Mallorca and beyond, as well?

Where are you going to moor the boat? Berths are in very high demand and there is near to no availability, so planning where to moor should one of the first considerations when choosing to buy a boat. 

New or second-hand?
When it comes to the boat market, your options are plentiful from brand new to top quality second hand yachts. There are benefits to both, for example buying a second hand boat could save you money on insurance, whilst a new one offers personalisation and exactly what you’re looking for.

Marine Surveys
It’s wise to have your new ocean vessel looked over by a quality surveyor before you purchase. By doing this they’ll be able to tell you if there’s any cause for concern which could save you money in the long run. It’s also a requirement for lots of insurers, so we highly recommend getting this done before you buy.

Licensing
Depending on the size of your boat you may need a license, be sure to check this before committing to buy. If you’re not planning on sailing the boat yourself, look into getting a reliable captain! In order to sail boats over 6m you require a local or international skippers license.

Anchoring rules
The Posidonia Meadows of Ibiza and Formentera were declared World Heritage by UNESCO for their importance in the conservation and protection of the Mediterranean Sea and its coasts. So sailing around Ibiza means you must anchor carefully, using eco buoys, otherwise you risk receiving a hefty fine.

Club Nautico Santa Eulalia
Santa Eulalia’s Sailing Club, opened in 1991, has everything you’ll need to be able to set sail across the Mediterranean. From courses, to sailing events that you can take part in, and also kids sailing school. Club Nautico has it all!

Salinas Sailing Club
Based in the nature reserve of Salinas, they offer everything from family friendly sea activities to sailing courses and water sports.  You can choose to take part in an excursion with the club or become a regular member. 

The best places to visit by boat
Now you’re captain of your own boat, it’s time to explore the beautiful island. There’s plenty to see, places to stop and grab a bite, and beautiful waters to explore.

Formentera
With a more relaxed atmosphere and more simple infrastructure, Formentera allows you to slow things down and step back in time slightly.  Arrive in paradise in as little as 40 minutes and float on it’s crystalline Caribbean-esque waters or moor up and stroll around its charming inland villages. For boating lovers, having Formentera next door is one of Ibiza’s greatest assets! 

Tagomago
A private island just off the east coast of Ibiza – explore the impressive rock formations or swim in the turquoise waters. The perfect place to get away from it all, only accessible by sea! 

Sail the island
Ibiza is impressive at every angle, so why not sail your new boat around the whole island and stop off at some of the most iconic spots on the island along your route?

  • South-West – offers views of Es Vedra, the island’s most magnetic and magical rock formation, and Atlantis where you’ll find natural ocean rock pools. 
  • West Coast – brings some of the most beautiful beaches, white sands and beach clubs. You’ll find Cala Bassa, Cala Conta and Cala Tarida over this side of the island, the perfect beaches to moor your boat by. This is also Ibiza’s sunset coast! Drinks, please.
  • North-West – you’ll find Cala Gracio, a small cove beach with a cute chiringuito where you can grab some lunch, or why not stop off in Cala Salada or Benirras?
  • North-East – Cala San Vicente has a large sand beach with good restaurants, and Tagomago island for an overnight
  • South-East – will bring you views of Ibiza town, Dalt Vila, Salinas and Playa D’en Bossa. Be sure to stop at Jockey Club for a drink at Salinas Beach if you moor up by this beautiful stretch of beach, or head to the iconic Blue Marlin Beach Club in Cala Yondal if you’re looking for more of a party.

Anyone with teenage kids is going to be familiar with the feeling of not fully understanding what they are talking about. Language changes fast and what was cool last year is just going to get you derisive snickers this year. Never fear, our latest list of new Spanish slang words for 2022 will have you eating lunch at the cool kids table in no time:

1. Hacer un next
We can thank Ariana Grande – who popularised the phrase ‘thank u, next’ in the song of the same title – for this one. Spanish-speaking kids hooked onto it pretty fast and hacer un next basically means the same thing. Naturally, our local youth took it one step further and added an augmentative to the end of the word making nextazo pack a heavier punch.

2. Trol de fango
Literally a mud troll. Enough said.

3. Chusta
This word has many uses but basically its similar to bummer in English. Next time you’re disappointed by something try saying vaya chusta.

4. Capitán Obvius
This could translate as a milder version of mansplaining. It describes someone who states the obvious.

5. Fail
Thank you, YouTube and TikTok. The English word fail has entered the Spanish lexicon and means exactly the same thing. You could also get away with fracaso epico but you probably won’t sound as cool.

6. Sinsajo
This translates as mockingbird and if you are not familiar with the Hunger Games series, best leave this one to the kids. It denotes someone lacking grace or chutzpah.

7. Fofisano
This translates as dad bod. Fofisano is the natural progression from metrosexual to hipster to middle age lethargy.

8. Esto es aceite de oliva
Use this when you want to describe someone or something as really good quality.

9. Me renta
When something is worth the effort.

10. Hasta nunki
When you say want to say goodbye forever. Add pendejo/a at the end and you’ve got yourself a top shelf burn.
